What a fun little meme and otters are the bestest! They're just ubber fun, spunky critters. But 6 am? I'm getting sleepy just thinking about that. And I keep meaning to try risotto so that's very nifty as is anything veggie with pasta.

My first tries at risotto were a misreable gloopy mess but once I found a recipe that explained how getting the right kind of rice was the key (and then actually following it instead of doing my usual guessing game) - it works lovely.

Fried the courgettes, then put them on one side. Cook peas and soya beans/edamame beans in the right amount of vegetable stock (750ml of water). 8oz Arborio rice, coat the rice in the left over oil from frying the courgettes then add half the stock. When the liquid has nearly all gone, add the rest. Same again, when the liquid is absorbed, I add about one or 2 table spoons of low fat single cream, a handful of cheese and the vegetables (peas courgettes and beans). And Bob's your uncle.

It takes about half an hour to make (one of my most labour intensive meals LOL!)

And yeah I know I'm mixing metric measures with Imperial but that's how I roll.

I've never had risotto, but there's this cooking show where the chefs make it all the time and perpetually make it poorly so I've always imagined there were a lot of ways to screw it up.

That's good to know about the rice - I love all the different rices and it's amazing how different their uses can be. The other day I was reading about how to make rice pudding and they were discussing the importance of proper rice selection for a good texture.

Thank you so much for the recipe! My goodness that sounds like a heavenly combination of ingredients and I actually like labor intensive cooking so that suits me quite well.

I love how you roll ;)

This is probably the most labour intensive recipe I do - I am not one to linger too long in the kitchen!

Ooooh and I think I might just have been the recepient of those yummy food dishes :D

If you wake at 6am do you get up then, and what sort of time do you go to bed? On my three work mornings I get up at 6am and it kills me!

Now I'm not working, I don't get up at 6am any more, I usually lie around for about an hour while hubby goes out for his bike ride or run, then get up about 7ish. And nowadays I go to bed about 11pm.
When I commuted to London, I was up and out of the house by about 6.15. I'm not sure now how I managed that!

Hehe, so you're not inclined to join hubby on his bike ride or run then?

Oh wow, yes being up and out by 6.15 is mightily impressive!

I can't ride a bike and am not built to be a runner. I'll stick to going to the gym.

Good idea. At least it's dry and warm in the gym.
